Honestly one of Tim Curry's best roles and that's saying something. It's one of the few times he gets to play a bad guy who's cold, competent, and physically violent.

Here's what I don't get about Hunt for Red October: So Sean Connery explicitly says at the end that he defected and gave his boat to the Americans because he realized that his fancy new Soviet submarine with its ultra-quiet caterpillar drive would be used to launch a nuclear first strike. But what's stopping the Soviets from just building another one and then launching a first strike with that?? They kept the plans, right?? I mean it's a totally silent vessel, even if you have one on hand to reverse engineer you're not going to magically figure out a way to detect another model with the same drive. It's not like finding a code key or figuring out a way to disable a noise cancelling device. The engine runs silent. He basically averted nuclear war for however long it takes the Soviets to build another Red October.

Patriot Games might not be considered a traditional "boat movie" since most of the movie is not about boats. however this movie features one of Sean Bean's best death scenes, which does involve a boat, and which makes special use of the boat's anchor. so i think it is worthy of consideration https://www.youtube.com/watch?v=kvAByCIqoOM

The Terror is a fun book about boats that get frozen in the arctic in 1850s, AMC made a series (not a movie about it). i think the book did some parts better but the series has a better ending so hey Under Siege is probably the stupidest boat movie of all time so there's that
