It's funny because over a decade ago, Oklahoma was the team that hosed around with Kansas before finally eating their lunch in the second half (kinda like they did this year) while Texas just absolutely dominated from start to finish. The rate that program has depreciated since the latter part of Mack Brown's career there is kinda astouding.

Wake Forest is pretty likeable otherwise. I'm not a native Carolinian, though, I'm probably not the best insight (and these thoughts are heavily influenced by basketball obviously).

NC State is always good for one (1) insane upset a year, they're kind of the ACC's equivalent to Kansas State in that respect. Don't know enough about SEC to have that conference equivalent, my eyes just see 'Bama and glaze over.
