The mind wipe spell falls apart the instant you even think about it. What about all of the print/internet, etc media that had surely been generated up to that point regarding Parker being Spider-Man? And this spell affects the universe!? The power of this spell would have to be massive, which makes it even more implausible that Strange would suggest and attempt it at the beginning of the movie.

Truly, a wizard did it.

It was an easy spell, he even pointed that out to Wong. What amplified it is Peter had him change it several times on the fly and wouldn’t shut up while he was casting it. They explain this in the movie.

The original spell still had to wipe the entire world's memory and all of the print and digital media about it, so if that's 'a simple spell' for these wizards then imagine what the world would be like if they applied even a fraction of that kind of power to make it a better place. But then we're getting into 'imagine if Tony Stark shared free energy with the world' territory and it always ends with realization that the MCU is all about maintaining the status quo because capitalism.
