It will at least be similar in texture to goat gouda. But goat gouda is kind of sweet and like, butterscotch caramel (at least in my experience) whereas garrotxa is more like, woody and buttery I guess. But I think it is worth a try You can also just ask your cheese store rep to show you some firm goat cheeses and you can usually try a little piece. If you like something, buy some and Google it and see what that leads you to
