it's all about the ratio of milk production to greenhouse gas emission. my guess is that ratio gets worse the larger the animal is. if you want efficient milk production, you gotta find a way to make bacteria do it, or maybe a cold-blooded animal that doesn't have to spend energy heating itself or thinking about stuff.
