I pretty much exclusively use a coconut milk/cream base for ice cream nowadays. I think the only real trick to it is making sure you're using a high coconut extract milk/cream to ensure you have enough fat content, other than that I'm not sure what other advice to offer. What was it about the results you got that left you unimpressed?
