Soldier of Fortune 1 and 2 had crazy gore but one thing I remember being really cool in SOF2 is that if you shot a window out in front of someone they'd get punctured by glass shards and they'd stay stuck in their bodies

The SoF games were so loving unhinged. The literal selling point of the game was "you can blow off people's limbs and watch them suffer and die!" The game engine was literally called GHOUL, and wasn't the player character based on some real guy who went into mercenary work after his time in the military? It's not particularly visually brutal but the enemy death sounds in the Rainbow Six: Vegas games were pretty unsettling. The bad guys' banter ("poo poo, bitch owed me money") added to it, but there was something really creepy about walking past someone you just iced and hearing him gasping for breath as he drowns in his own blood.

It's a popcorn horror game with incredible production values that has a pretty brainless but fun story and combat that's really fun and low effort to play, the combat system keeps the pacing going which is something a lot of horror games suck poo poo at.

But yeah the Solider of Fortune games were partially violent for their day. There were reactions if you shot people in the groin and it looked as painful as you'd expect. Shoutout to Rise of the Triad and the weapon that made everyone into skeletons complete with a comical xylophone sound as their bones fell into a pile on the ground.

There was a third SoF game, but that was after CoD sucked the arcade fun out of FPS games. The first FEAR comes close, and Trepang2 is promising, and Cyberpunk 2077 has some grand gore, but I haven't found anything that has chunks blowing out of people like SoF. Bulletstorm is a classic, too. Wild 9 for a PSX platformer that had you slamming enemies onto spikes to use them as a bridge.
