Well they are hollow, so there isn't much of them to cook. The big deal is that cooking them whole leaves the giant gross seed lump intact.

Humps are very fatty because they're an extra storage spot for fat. Combine that with any cooking method that's meant to keep meat tender and it will fall apart.

The things they pulled out? Those are just ultra hot rocks that are packed in to cook whatever meat is in the sack. They're hot enough to boil water on contact.

It's a light batter with a lot of volume from whipped egg whites, and cooked with lower heat so the inside isn't raw while the outside is brown. You can find youtube videos of them being made at home without being raw in the middle.

I've never had the pleasure myself, but the guy I sat next to at work treated himself once a year to one of these. I can't find any photos, but if anyone is better the Googles than me and wants to go looking, it could be found in a layby in the West Midlands, UK somewhere. The shellfish, or squid, gets cooked by the heated press. It's like a sandwich presser on steroids, and they cook quickly (the video cuts out all the cooking time) because everything is crushed paper thin.
