On YouTube and Instagram, there are a shitload of videos of chefs at stalls or carts or whatever cooking and serving Foreign Delicacies. While some things like, say, doner kebab, pretty much always look amazing, I have found a lot of local dishes that confuse the hell out of me, or are just plain interesting.

Here's one from Turkey, a dude making a big pot of çiğ köfte. Note that I will almost always post the mp4 with the sound so turn that on if you want to hear either weird loud foreign music or people speaking a language you don't know.

https://i.imgur.com/QzhchkV.mp4

quote:

In Turkish, çiğ means "raw" and köfte means meatball.

Bulgur is kneaded with chopped onions and water until it gets soft. Then tomato and pepper paste, spices and very fine ground beef or lamb are added. This absolutely fatless raw mincemeat is treated with spices while kneading the mixture, which is to cook the meat.[10] Lastly, green onions, fresh mint and parsley are mixed in. Some çiğ köfte makers, particularly in Adıyaman, do not use water in their recipes. Instead of water, they use ice cubes and lemons.

In the beef variant, ground beef is used. Tendons and fat are removed before grinding the beef. High-quality beef is required, since it is served raw.[1]

So raw meat and bulgur and spices and stuff. I'd eat it, though I don't know how quickly you can cook raw ground meat with "spices and kneading".

Here's a vendor giving it a final molesting before hand-squeezing it in to its distinctive.. hand squeeze shape, and served on lettuce to be eaten Cold.

Figured I'd start off with one I've actually read up on, but there's definitely weirder stuff out there, check out this one also from Turkey that I've posted elsewhere:

Here's one from India. As far as I can find, "Unlimited Eggs" is a common thing in Surat, but I can't actually figure out what they mean by it.

That is Mumbar, an intestine stuffed with "mutton, rice, black pepper, salt and cinnamon"

It's often served along side Sirdan, another stuffed offal of somehow approximately horrifying appearance, though stuffed with a more basic rice mixture:

This thread's mostly foreign based since I've already gone through basically every weird American food imaginable in the Americana thread, but I don't object at all if it's interesting.

I doubt I'll be finding or posting anything "new" on that front myself.

I get a lot of street food stuff on my Instagram because I'll watch a Turkish thing on loop like 5 times trying to figure out if it's delicious or not. I'm thinking a lot of them have been the çiğ köfte.

This gon' be a good thread

That's basically the origin story of this thread. Finding Sirdan a few months ago put me down a rabbit hole of Turkish and other foreign foods and now my entire feed is similar stuff. Sucks it won't let you follow hashtags in non-latin alphabets, Korea and Japan are up to some poo poo, I can tell.

Turkey I like because they also have their own distinct popular food videos with smiling at the camera while cooking, there's the one psycho looking guy who never looks away from the camera, but a bunch more that seem far more genuine

The greatest of all of them, of course, is Pendirhan, proprietor of Pendirhan, a food market specializing in pistachios, pistachio derived foods, olives, and brined cheeses, among other similar kinda stuff. He is my favorite because he seems genuinely childishly happy.

the thread title is mostly a suggestion

as long as it's at delicious or delightful, dubious or deranged, then as the statue of liberty says:

"Give me your sauces, your meats. Your writhing masses of fat turkish guys belly dancing, the wretched refuse of your teeming shore, your repurposed clothes dryers used in food prep" etc etc

Here's one that's not too visually striking, but I've actually had it before: Thai stewed pork leg

https://i.imgur.com/35xW8BT.mp4

I would legitimately put this dish in my top 10 of all time. So simple, stewed pork leg over rice with fixins. The "stew" is a Chinese inspired one with star anise and five spice and cinnamon, used to cook a meaty pork haunch on the bone. The best part is they throw medium-hard boiled eggs in there to soak all day. The pork is one thing but the loving eggs in that sauce are unbelievable

AARD VARKMAN
May 17, 1993
Video quality here's kinda poo poo but this shows the way I had it served, with just a huge pot of legs n eggs that they butcher to order and serve with pickled mustard greens. The place I went also offered crispy fried pork slabs as a small addition.

One of my favorite subgenres of Indian street foods is when they cook way too much poo poo on a big flat top and it's clearly going off the edges

somehow hard to find when I look for them though, which is a shame because I've seen videos showing it glop right off the edges without a word lol
