I used to think comte was boring but we got some really nice 24 month aged stuff from the cheesemongers which has changed my mind. full of cheese crystals

i live pretty close to the dairy that makes jarlsberg, but i can't stand it. take a bog standard swiss and add a drop of puke, then you have jarlsberg.

i like port salut because it’s cheesy and a little fruity just like me. pretty mild. excellent sandwich cheese.

there’s also a dairy around here that puts out 15yo cheddar. fully of calcium crystals. very good. there’s an incredible cheese store in toronto that we got some unbelievable cheese with truffles in it once.

my favorite cheese experience is toasted over some sourdough with butter

other than that I'll eat fancy cheeses with whatever crackers I find at the trader joes

quesadillas also a good comfort food for me but I don't take them too seriously

bread or crackers alongside something sweet like a jelly. almost any kind will work well, fig spreads and pepper jellies are of course classic. works with almost any cheese and any bread product.

I like triscuits and cheese. Havarti with dill in it is good, I’ll get that sometimes and eat it with the crackers
