That looks really good and I want to ask an embarrassing cheese question to the cheese club: are you supposed to eat the rind? I always eat around it but are some edible?

if you're a dog they're all edible

if not it depends, generally soft cheese rinds are edible, hard ones are too tough to be pleasing (except for like supermarket cheeses). sometimes the rind will have a different taste vs the body, particularly if it's a washed rind (taleggio, morbier etc) which you'll just have to taste to find out if you enjoy it.

don't eat wax if the cheese comes wrapped in that!

yeah for like brie it's good to eat the rind. definitely a different texture, kind of mushroomy almost.

there's also ones with paper rinds, probably don't eat those either.

Brie rinds should be fine unless it's like super stale or some weird style. I'd expect especially the supermarket ones to be completely fine, how do you even remove it anyway without losing half the cheese?

no. blue cheese obviously. and some rinds. but the cheese itself, no. much of it is fermented, yes, but not by moulds.
