I'll be honest, I like them best when they're still a bit green. Once they are ripe there is something off-putting about the flavor. I can't eat spotty ones, they seem sickly sweet.



4-6 is when they taste the best imo to eat alone. 7-9 are good for smoothies, blending into pancakes, or baking. Past that is gross.

I used to freeze them and blend them to make a healthy ice cream alternative, but stopped because it's a depressing substitute when you just want ice cream or fro yo.

4-6 is too bitter for me, although I like how firm they are at that stage.

At 7-9 they have a good balance of firmness and taste.

Had this problem before?

I can see it happening, but typically, I decide either I'm making the bread that day or the next, or I'm just tossing it out. If I put them in the freezer, I'll have that exact issue.

I'll eat anything not green-11
12 if I really want a banana and that's what's left.

I know I have a different palate than other people, but there is something about the sweet flavor of ripe bananas that seems sickly and just makes me nauseous. The greener ones have a bit of tartness that balances it out, and I don't have a problem with them.

I can't say I thought it tasted like raspberries but it is a slightly different flavor while still tasting banana-y. The texture is a little different too unless they get real ripe. They're slightly more fibrous at least the ones I've had.

They also ripen pretty differently. Usually they feel firm for a really long time.

E: don't eat them unripe, it's the driest banana you'll ever have in your life.

Artificial banana flavor is superior to actual bananas. If we had the technology to grow a stack of banana flavored wacky wafers on a tree, then we'd really have something going on, then.
