You've included pics and I'm still not sure what burrata actually is. The only thing I know about it is this and some rich guy chef bitching about people making too much of it and ruining how special it is. I hope people make more, gently caress that guy, how little does he have to complain about? I'm not googling it, I don't care enough beyond making this post.

here is a textbook description Burrata is an Italian cow milk cheese made from mozzarella and cream. The outer casing is solid cheese, while the inside contains stracciatella and cream, giving it an unusual, soft texture. It is typical of Puglia. basically, super gooey super creamy mozzarella

I generally don't eat cheese, OP (except for cheese cake), but a good peach would be delicious right about now. I've never had a roasted peach, but it sounds pretty nice.

I've never had it. I feel like If I was going totally crazy with cheese calories I'd go for some water buffalo mozz or something like fromager d'affinois with herbs. Wouldn't turn it down though.
