When I worked at In-n-Out, there would usually be a few big ones like that in every bag. They'd often be hollow with black scuzz on the inside; if you ever get fries with hard black spots on one end, those were cut from the center of the potato. National Geographic had a handy guide to rare Andean potato varieties a few years back, thankfully Google was able to turn it up.
