I'm just imagining people going to Bologna and arguing with everyone not using the right types of ground meat lol It's funny how many authenticity obsessed foodies I've had to deal with who also refuse to believe that Bolognese sauce would use veal. Turns out authenticity is one thing, but not if it gives you the ick. Altho it also depends how far back you wanna declare authenticity. Realistically for "real, traditional" Italian food nothing would have tomatoes, what with them not existing there til like the 1500s. Which is pretty recent in world terms.

I mean there's a bunch of different types of tacos and, yeah, some shredded cheddar is great on the hard shell type but the soft corn kind doesn't usually have cheese except maybe cotija. Needs to be something less sharp to keep from overpowering the meat imo. Hard shell tacos are usually spicy ground beef which can hold up to a stronger cheese.

Actual chefs think these kinds of articles are absolute bullshit. Unfortunately people have received tons of negative press over cooking the wrong stuff. There was the "Clean Chinese Food" lady in NY who got international negative attention for daring to cook healthier versions of takeaway favorites. They lasted less than a year. They even apologized but the damage was already done. As if the restaurant business wasnt fraught with enough risk, chefs have to now consider if they are the correct race to cook their menu lest the NYT bring the ban hammer down.

I've eaten a few dehydrated bugs. Crickets and millipedes. I don't like them, they get stuck in my teeth. The worst meal I can remember is green bass caught from the cow pond. I know they can be good, if you do it right, but you gotta purge them. Tasted like moss and dirt, now I can't eat catfish, the taste comes back.

My kid dipped her broccoli in pineapple juice. My initial reaction was 'eeeew gross don't do that' Then I tried it, because I had to... and it was indeed, eeeew gross. But as long as you're eating, I'm happy. Freak
