Iron-Blooded Orphans and Witch from Mercury are good modern stand-alones in their own universes, no background knowledge required. 0080: War in the Pocket and the Gundam Thunderbolt: December Sky movie are good short intros to the main Universal Century setting. The original Mobile Suit Gundam TV series is a genuinely neat show if you can handle a fifty-episode anime with mediocre Seventies animation, and gets you started on the main UC saga. Gundam Build Fighters (the original series) is a charming sports action-comedy with surprisingly excellent music and action that has lots of franchise in-jokes but is still pretty accessible for newbies.

Start watching Gundam. Pick a Gundam, any Gundam.

The currently airing Witch From Mercury is good, especially if you enjoy following a series as it comes out.
Unicorn has the best animation and arguably the best music of any Gundam series, that's a good choice for maximum visual enjoyment.
0080 and Thunderbolt: December Sky are both excellent movie length options if you just want an evening of Gundam
G Gundam is great for hot blooded fighting action, if you prefer anime with lots of yelling.
And hell, don't overthink it, Mobile Suit Gundam. The original show is great and still holds up, albeit with a few episodes of wonky animation. One of the really fun parts of watching Mobile Suit Gundam is that afterwards you'll be able to see how much of modern Japanese pop culture is blatantly cribbing from it.

People used to recommend newbies start with Gundam Unicorn because that was the new hotness, even though it's so contextual to the rest of the UC you can't fully appreciate it without already being a fan.

I'll do what practically nobody else has done and recommend 0083: Stardust Memory. It's not that great, and it has a really bad romance plot - but the animation and direction is some of the best in terms of pure military mecha action, and it teases enough from the rest of the UC timeline to get you interested in the rest of the series, which is all actually better than 0083 so you have something to look forward to. People call it "Top Gundam" because it really is a slice of 80s military fantasy in the same vein as Top Gun and Tom Clancy novels. The only thing stopping it from being right wing polemic is the fact that everyone has to turn into a fascist by the end.

But it's really great at portraying the Zeonic remnants and the kind of bureaucratic corruption that the UC timeline is known for. Anavel Gato is a really good character study of a moron who instrumentalizes himself to history in the sake of some inherited ideal that only makes everything worse, and Cima Garahou is a 10/10 baddie.

Because it's an absolute atrocity produced by executive meddling. The first act is great on its own because it's a consistently directed cinematic experience, and then it jumps around too much to try and cover the most important plot points of what would've been the first 12 episodes of the planned tv series, with no interconnecting points. It's a baffling movie that only fans should try watching, or people who like watching weird movies that went through development hell.

cima got done dirty and deserved better

also 0083 should have been the movie and f90 should have been the series
