First: buy good fresh bread that has a reasonably solid crust (it doesn't have to be a crusty bread, just a bread that has a solid outer crust). If you're in America and don't have access to a bakery, believe it or not Lidl does a great job of this if you have one. Only slice the bread when you want to eat it and store it in a bread box because slicing the bread introduces more air into the loaf, which makes it not only mold faster but also go stale quicker. The bread box will keep it well. It'll mightt last a week and it will definitely stay fresh. It will probably mold by the end of the week so be sure to throw it out by day 5 or 6, otherwise you risk having to clean your entire bread box.

For those in North America without a bakery:

350g white multipurpose flour
150g whole wheat flour
7g salt

Mix em together in a big bowl, then add to a divot in the middle:

10g honey
360g tap water
7g active dry yeast

Mix it together so everything is wet. Leave it alone for half an hour to really soak in.

Then knead for about 10-15min, cover, let proof until it's doubled in volume, probably a few hours depending on the temperature of your kitchen.

Preheat your oven to 450, knead again to get the biggest bubbles out. Let it rise again after having formed into a circle, or put it in a greased or floured tin. Once it's risen a bit slash the top to let baking gas out, scissors are fine. Bake for 40min, let it rest on a wire rack for 30min afterward before slicing into it to give it time to set up.

You can make several loaves at the same time and freeze an entire loaf in a bag, just thaw it at room temperature in the bag overnight before you need to use it.

Keep in a bread box or an old bread bag, slicing only as needed jesus christ don't slice a whole loaf at once wtf

Or just make the NYT no-knead bread it's easy.

My secret to keeping my bread from molding or drying out is that my family eats it all within like 2 days of making it lol. Imo bread is meant to be eaten fresh.

I do like my bread box though, well worth it for when I make milk bread. You can also cover the part that you've sliced into with some tin foil if the rest is covered with a hard crust and it should keep the moisture in

that's actually surprising because it sounds like it would just make a mess. I still prefer to use my stale bread for french toast or crutons. if you slice it before the end and leave it out on the counter it'll dry out completely and shouldn't grow any mold and you can use it even weeks later

I used to bake all our bread fresh when I lived in Japan because the bread there was overly sweet and kinda gross but it was a pain in the rear end.

Like it's super easy to do, it just takes ages with all the downtime and poo poo.
