Sunny had an absolutely crazy history with the company and was even more of a risk, to the point where they had to cut her rehab off after. Bruno Sammartino would go on TV regularly to talk about how awful the company was. Bret Hart the same. Ventura sued them and tried to start a union. Of those only Sunny had less of a run than Jarrett but Bruno was a start 30+ years before his induction and his feud with WWE was much, much worse than Jarrett's.

He had leverage (mostly because Vince was dumb and didn't think to take the belt off the guy before his contract expired), and he used it. He looked like a fool on his way out, got Chyna over, and made six figures (I think?) doing it. Everybody wins. Good for him.

He, the worker had tremendous leverage and got a six figure pay day to do a match he was in no way obligated to do. If you wanted to call what Warrior did extortion you probably could as he had a valid contract, but Jeff did what any sane, maybe slightly short sighted person would do. He took them for all that they would pay him.
