Like in John Wick. Is there a term for it? Also, has it ever been good? Every time I see a movie that does that, I wish it didn't.

Perhaps it's in the nature of television. Just waves in space.
Don't Breathe does it pretty well, I think.

When it's pulled off correctly I think what they're going for is a "Huh, how do we get to this?" at first and then a "OH RIGHT, THAT HAPPENED" the second time.

Fight Club's is definitely one of the best. I always appreciate the dialogue.

I think it's pretty wicked that the first scene of the first movie is John wick dying on the street and now there's a sequel

I forgot, but that's probably a more popular example. There's Double Indemnity as well.

In medias res is exactly what the OP is talking about. A cold open is getting straight to the plot of a movie/tv show without a title sequence or beginning credits. Not that they're mutually exclusive.

Most of the time it reeks of producers panicking that a film is starting too slow and hastily shoehorning in some action up front. No sir I don't like it.
