I was gonna make a double batch of chipotle buttermilk cornbread for a work trip but ran out of cornmeal at the last minute and had to buy a cornbread from city market for the second batch and it was like yellow cake. Just wet and nasty. Could have been good in ice cream

I would go with Tex Mex. Southern BBQ is good but there's too much sticky sauce, starch, and cheese. Even the beans are cooked in a sugary molasses sauce with a cube of pork belly. I would burn out on all that fatty sugary decadence. With Tex Mex you can have a rich, cheesy indulgence like enchiladas al pastor or a basic grilled chicken taco with pico de gallo and a dash of hot sauce.
