I still would love to watch him attempt to play Doom since he didn't have a chance to play it on the US trip. The only genres I can think of that they haven't played yet (to my knowledge) that would work for the show are point and click adventure games, rhythm games, casino/gambling games, and first person shooters. Another possibility would be simulation games like SimCity, which don't end unless you count the scenarios, but they could give him a goal like getting a million people in his city. I'm pretty sure it would be boring to watch, though...

Arino's gonna take up Starcraft and show the Koreans how it's done. As for an actual anwser it's really hard to think of one. I agree with maybe a board game type, as the only other genre that comes to mind is turn based strategy and that's only if they wouldn't count the Fire Emblem special as being a normal episode.

So I wouldn't dismiss a derby challenge so quickly.

If he plays Doom, it should be the way Carmack intended - on a PC, using a keyboard as a controller. Might make for a pretty good episode. Imagine the look on his face when he realizes that you lose all your weapons when you die.
