So what's a good country to pick for learning the ropes in March of the Eagles? Is it better to just jump right in as France or Britain or something, or play one of the middle-tier great powers like Austria or Prussia or whatever?

Is the book he's recommending people "crack open" called Mein Kampf by chance? I mean, it's probably technically correct to say Hitler didn't promise to rule the world. He merely promised to conquer Eastern Europe, murder, starve, and drive out as much of the local populations as possible, and use the survivors as slave labor under their new German masters. I have no idea why anybody would want to pick on poor persecuted Germany for that.

So I did a 867 to 1452 Hands off unmodded CK2.. And these have to be the nicest AI borders i've ever seen. I plopped it into EU4 with some slight modifications and doing hands off there. Oh and that is Bulgaria in southern Iberia
