the best food i've had comes from experts with simple tools fire, oil, spice, steak democratizing it and removing the process from your control enables greater heights for those experts, but cuts out the bottom rungs of the learning process and prevents us from creating the next generation of experts idk i'm trying to club this rant together with what i see happening with hw/sw development, kids running around atop the web stack without respect/understanding/care for the machinery beneath them, but god damit throw a steak on a fire, have a crappy steak, and learn you a cookin

JawnV6 posted:god damit throw a steak on a fire, have a crappy steak, and learn you a cookin yep, to me theres 7 things that anyone who wants to be a good cook needs to master first roasting a chicken slow cooking pot roast grilling a steak grilling shrimp correct consistency mashed potatoes hand made pasta steaming vegetables correctly this is extremely basic poo poo that anyone should learn to do if they have to cook for themselves. theyre also extremely cheap parts of meals that can be combined and extended. if you can do these things you can eat much cheaper than a restaurant and have very delicious results.

JawnV6 posted:the best food i've had comes from experts with simple tools i agree that people as a whole are worse at cooking but tbh cooking has always been the habit of a relatively small number of people. Back in the day you just found other people who could cook, where today you can get by on hot pockets and never talk to another human being ever crappy steak owns tho

my issue with cooking is that my condition means that i cant just cook something for sustenance whatever i make has to be some sort of autismal production so it's a) never cheap and b) almost never quick and c) probably not particularly healthy

what last night me and gf had an early dinner somewhere and we were sorta hungry later at night so i made a pot of rice and we ate it with some soy sauce. total cost probably like 35 cents u cant make a simple thing? it has to be artisan-fired lobster with a side of organic local rice?

the "next gen" cooking devices are robbing people of understanding ensuring everyone interested in the subject comes away with the same skills as the hot pocketers go read this, much better on this point than my rambling asides: better link: http://www.scribd.com/doc/23333752/William-Morrison-The-Sack same dude that knew steak also made a killer venison wellington, idk

Al! posted:i don't actually have a problem with sous vide but cooking amazing food is sooooooo easy with just a heat source a pan and a knife youll still get different results sv produces specific, very reliable results. you can make an incredible steak on the grill every time if youre good, but its not going to be the same as an SV'd steak. youll get the same SV steak if you do it the same way every time.
