A big part of it too is water quality. Raw milk isn't a picnic, but given the choice between raw milk and a water-source with fecal contamination, raw milk wins by a wide-margin. You'll notice the correlation between lactose-tolerance and alcohol-tolerance. If water kills you, milk is better, booze is best. Another way around this are teas. If you heat water until it is scalding hot before you drink it, that also kills off most of the baddies. Add in some plants with anti-microbial properties and you've got an even better chance at making it. Cultures with hot infused-beverages also like to drink booze (for recreational purposes) and milk (for nutritional/flavor) purposes but the selective pressure to drink them is absent. And if drinking milk is optional, finding ways to ferment it to make it more accessible (and, some cases such as kumis, more fun!) are technologies you can develop over time with no real rush.

Now, this is all w/r/t the percentages in Central Asia. Which could be wrong for all I know, or explained by something completely unrelated (high percentage of the population being of recently arrived East Asian stock, for example). I did make a point related to the article (I've read it before) above: that a cattle herding population which has been keener to adopt dairy in the diet because of their lactose tolerance could vastly outperform an agricultural population which hadn't adopted dairy. But in this case lactose tolerance is almost an artifact rather than the main cause for the evolutionary results. The difference is the nutrients in milk/dairy, and it just isn't true that those with lactose intolerance absolutely cannot acquire them. If you've read about the Rwandan genocide, you'll note that one of the main differences between the Hutu and Tutsi is that the Tutsi are traditional pastoralists, and as a result of that they're generally taller. Now bring up statistics on lactose tolerance in Rwanda and we've got some really good numbers. (This is a silly debate.)

Delicious! But not a selective pressure. You'll note, for example, that peoples who routinely add milk to their tea normally fall under skull types I, II(a). II(b) and III(a) routinely drink tea, but without any milk, though III(b) has a propensity towards drinking fermented milk products. Speaking of anthropometry/social phrenology, does anyone have any maps for that? I spent a while looking because I know I've seen some hilariously crazy maps the Nazis made based on skull-type distribution. It's a wonderfully crazy lens to examine history.

So, if I'm interpreting this right, they brainstormed a bunch of 'funny' things to google, then figured out which state googled each of those things the most. If a state had two of those things, they chose the funnier one. If a state ended up with none of them, they brainstormed more ideas until they found one that state ranked highest with. What'd be actually interesting is if they managed to find the search term with the largest "gap" between that state and all other states, but that would require analyzing every possible search term.
