Fondant, a laser light show, and some very good software. Apparently (though I'd hesitate to believe without seeing it) it's clever enough to do procedural changes to the animation as the cake is cut, like, say, turning a river into a waterfall as a piece is lifted out.

It is called projection mapping, can be used on entire buildings: Played with it before a few years ago, now there are more tools to do it, depending on how much you want it, you can do it with relative ease compared to a few years ago. The biggest cost is the projector really.
