The filter really exaggerated how dark the sky was. It was really dark blue, but with the polarizing filter it got a bit ridiculous.

Yeah that's a bit nuts.. if I don't look at it perfectly straight on on my monitor it's basically black.

It'd probably look better if it was all a consistent shade instead of getting darker at the top.. that's easy to fix in post, right?

Yes that is fixable with teh grad tool, just dodge it a halfstop and be conservative with the size of the grad size.
