I remember Humoresque, Toll of the Sea, and Interiors all ending on beaches, though those aren't victorious moments. I think beaches represent a sense of renewal moreso than victory, a sense of perseverance against (or spitting in the face of) God and nature.

Also ends on the beach: Return of the Killer Tomatoes.
