I make something like that except I make a weave out of the bacon. It gets stuffed with either ground beef or pork and chopped jalapenos. Then it gets put in the smoker.

American who loves marmite checking in. I lived with a bunch of Brits for six months and I got hooked. So good on toast with a bit of butter. The soy sauce comparison is spot on, it just tastes like yummy umami goodness. E: idk about that pizza though. I get that it's just an ad but that looks like a lot of marmite.

They may have a disclaimer in the menu saying that anything cooked to order has the potential to harbor foodborne bacteria, but when it comes down to it they won't cook it rare. I've asked for rare and they do look at me like I'm high and just say "pink or not pink?" So essentially they don't know what rare means if they do that. I just ask for as rare as possible. Usually they will cook it medium and won't question me about it. The only time I got a steak that was truly rare was from Anthony Bourdain's restaurant in Washington DC. Same goes with burgers and apparently a restaurant that's willing to cook a burger rare actually grinds their beef in-house. Bobby's Burger Palace warns people that when you ask for rare, the burger is really really rare because I guess people who ask for rare burgers are used to restaurants cooking them medium. That rare burger was awesome, by the way.

See chickens dunked in chlorine and banned raw milk cheeses. Also this bacteria paranoia is even harmful for people because we need a rich gut microbiota in order to be healthy.

The issue is that customers prefer their food more cooked than they think. People think it's cool to order rare and then they return it for being under-cooked. Just like people return well steaks for being over-cooked. They don't know what they want. You have to take the time to do your own cooking so that you can try all the variations of internal temp, crust, color, flavor, etc. until you can really decide what you like. I used to like straight medium, but I discovered that I actually like medium-rare. When I cook a steak medium-rare at home, there's still red in the center, but it's hot. At a restaurant, medium-rare is more like medium which is pink in the center. There's a chain of restaurants called Pittsburgh Blue in my area. I've always wanted to see if they'd make me a "Pittsburgh Blue" steak, but I'm betting they won't. I tried making my own at home but I can't get a hot enough surface. I tried MAPP gas but it still wasn't enough heat. Next time I'm around an Oxy-Acetylene torch, I'll try again on a piece of steel.

I eat my steak medium. This was an issue as a child as my father eats his ultra well done while my mother eats hers blue. I never got to find out that steak could be nice till I was able to order one at a restaurant in my early teens.

I don't prefer blue or super rare steaks, but I don't begrudge people for liking meat to their preference; I just get weirded out when people buy relatively expensive cuts and blast them to hell. You should try some sous vide steaks if you want easy mode steak doneness. Hot water at temp, glowing hot pan, and a cheap propane torch form the hardware store, and you can get some really superbly finished meats, including medium-rare pork chops and chicken breast you can cut with the side of a fork, with minimal meat myth bullshittery. 'Medium rare' isn't really a thing in pork, there is a minimum internal temperature you need to cook pork to. If comparing, it's much closer to medium to medium-well in color, with just the slightest pink tinge still inside. I feel really sorry for all you weirdos who need a machine and water to cook your food for you.

Trichinosis isn't really a thing much anymore so you can totally do medium rare pork with most cuts if that's your pref. I had a softball-sized steak cooked Chicago blue one time and it was life-affirming. It was like a deep purple inside. So good.
