I feel that perhaps with all these shokugekis being thrown at him, Soma can acquire enough "stuff" to use as a basis to challenge Eizan. This would fit nicely given their earlier indirect confrontation, put him above Erina and Hayama/Kurokiba as well.

Huh. Now that I think about it, have we ever seen Souma getting help while cooking? He's been sous chef a few times, but never been put in the position of having to rely on someone; that could be a nice challenge: learning to let go of some responsibilities while trying to cope with your underlings being morons

Tosh is the artist of Shokugeki, not Assassination Classroom. As for the mom stuff, that was just goon speculation since that arc was resolved too fast and neatly for some people, unless there was some article or interview that confirmed he backtracked. I don't think he did since editors typically have some idea of the outline of the arc the mangaka wants to tell, but I could be wrong.

That was AssClass, by a different artist. And there's no evidence of that, only some goons speculating. I don't buy it, personally. He probably wanted to resolve Nagisa's story arc quickly so he could move onto more interesting stuff, since immediately afterwards came a bunch of very important plot reveals.
