I realized I had never been taught WHY that makes a positive number and had to really look around for answers beyond "because it just is and math is correct or incorrect". Same thing for why you can invert and multiply when dividing fractions. I say if kids are learning the why these days then good, even if it does look convoluted.
I still don't understand what this "common core" method is, but I certainly learned this stuff. Did you not do stuff with number lines in maths class where they explain it as addition moving to the right on the line and subtraction moving to the left?

They wanted you to write out what 4 x 7 and 3 x 8 equalled separately before going to your first step, even though they knew what you meant and your work was correct.

It's a boring and drudging way of asking you not to skip steps no matter how rote because taking the time to check the foundation you're working from gives a higher chance you won't waste time doing everything else right yet getting the final answer wrong cause you got cocky and rushed.

I learned that when I was goddamn 10.

In a nut shell, common core math, common core English and the Next Generation Science Standards are all trying to get at understanding rather than knowledge, and this is a nuance that a lot of people don't really get. Even many teachers don't get it which leads to wacky implementation. It's great that you know off the top of your head what 7x8 is, but do you know why? That's what common core questions are trying to elicit from students. Whether you value that or not is an individual preference but let's at least not act like this is some weird moon people science.

No poo poo but again it's about making sure you follow a process rather than getting into the habit of shortcutting every "small" task in your head, which depending on the number crunching you're doing can gently caress up a shitload of work or even endanger lives if you have that 1 in 1,000 moment where you go with (7x4=32) in your head because you were tired or slightly distracted or some other poo poo. I'm not saying everyone actually works that way or that I even wholly agree with it, but that's why the teachers are such pedantic assholes about it.

What is the "process" for multiplying two single-digit numbers? The only one I know of is counting multiples and you're certainly not going to do that every time.

You just write out (7x8=56). That's it. That shows you understand basic multiplication and took the half-second needed to confirm what you likely came up with in a few milliseconds. Congrats, now can transfer that thought process to other things you do.
