 Do not use dried chili powder.

The secret to a good chili is in the chilis.

Get all of these chilis. Just get which ones you can; many of them you will only find dried or canned in case of chipotles obviously.

    50% of:
  • Ancho
  • Pasilla
  • Mulato
    Then about 1/4th that amount, make:
  • New Mexico Red
  • California
  • Costeņo
  • Choricero
  • Chipotle + Adobo sauce
    And for heat (just a guideline, obviously it changes based on volume):
  • 4 fresh Thai bird chilis
  • 2 Jalapenos
  • 1 Habanero
Use this recipe as a guideline. I know the anchovies and chocolate and marmite seem really weird but definitely add those in. Make a batch somewhat like this (I like it generally spicier) but tweak from this starting point.

 get some dry beans soak them overnight add them to a slow cooker with some broth and some tomato paste and some spices (lol chili powder duhhh) and vegies and cook all day, bam good chili
