Anything that looks down upon egg on a burger is wrong. Actually that whole loving article sucks. A tiny bit of mustard when the burger is cooking is fantastic.

Its the parents house. I'm not ballin' that hard. However I get to live next to the beach so :shrug:.

That ramen salad was dope. Plus those home made baked beans with bacon chunks!!! Also there was pulled pork in that crock pot next to the grill and that got destroyed. Lots of other cheese, onion dip, and ~*deviled eggs*~ were eaten.

Then I took an Uber Black back to my house and partied all night. Twas a good day.

You know, it sounds good in theory but I actually had pulled pork and burgs once and I actually preferred to keep the pulled pork separate from the burgs. I'm sure it would taste great, but both burgs and pulled pork sandwiches taste great on their own and it seemed like a bit too much.

Then again, my burgs *always* have bacon, so... eh.

Yeah I feel the same. I like trying random stuff on my burgers, but pulled pork and burgers don't feel like they compliment each other well like how bacon/burger does. It just kind of gets sloppy and doesn't add much. That being said, I do enjoy chili burgers.

Yeah, that's a big old patty of fried mac and cheese on that burger, and the meat's sirloin, ground fresh daily. Nothing beats loving Appollo Burger, even if they can't even spell their own name right.

Barbecue sauce and buttermilk ranch dressing are good, too. Somehow those two condiments go together to make a smoky flavor that is out of this world.

Mustard is good on all dogs. Corn dogs I feel are best with both ketchup and mustard, because why the hell not it is a corn dog.

I will say that for a burg mustard is not as good as mayo (and other fat-rich items like cheese).

Ketchup is pretty good for thin, char-broiled burgers where there's a high ratio of char. For thick burgers ketchup is a pleb topping, the tiny amount of vinegar just can't cut through the fat, hence why dipping is popular.

Today's burg musing: The simplest possible best burg is one good quality charcoal-grilled patty on bun with garden-fresh onion. I'm talking pluck the onion from the ground, wash off the dirt, and cut one cross-section. This is nirvana. The toppings I'd add if available in order are: mayo, black pepper, pickles, american cheese. Then you have the best possible backyard burger. A slice of tomato fresh from the earth makes this garden pornography, to be enjoyed with a summer-themed beverage.

Hey now it's not like mustard is exclusive to also having mayo and cheese on a burg! (And is in fact how I enjoy many of mine).

Good sharp/hot mustard combined with a creamy/(Even garlic-y) mayo and a cheese (There's so much variety here that you can go hog wild with the tweaking) owns.

Light smear of Best Foods/Hellemans mayo, just a touch of dijon (or regular yellow mustard), and a few drops of ketchup would be my "normal burger" condiment setup. Or make up some home made special sauce with dill relish.

No cheese today, just burg, lettuce, gherkins. I put ketchup+mustard on one and BBQ sauce on the other.

The buns were Brioche buns - spotted some reduced Heston ones in Waitrose so tried them out (toasted). Still think i'm just a fan of just a regular white Asda roll though. Brioche ends up tasting pretty rich after a while.

- These burgers end up getting kinda chunky once they're cooked, would squashing them thinner before cooking help or would it destroy them?

What do you mean by chunky? There's nothing wrong with thin burgs, they work totally fine. Chunky seems to imply there were spots that were a lot denser than others? Maybe the ground beef was packed too tightly? Smashing the burg flat is one thing but you definitely don't want to tightly pack your beef patty.

Smash burg is the way to go. Let the meat come to room temp, then toss a ball (4 oz or less) on a super hot griddle and immediately press it flat and then with a spatula. Cook a minute or two a side. Gives a great crust and moist burger because it cooks so quickly.

Sorry yeah the texture was great, I meant more that the patties ended up rather thick once cooked. So maybe a little smashing is needed, but not too much :)
