You had to fight IpponDatara in Muramasa. First you had to fight its giant foot swinging at you from the clouds before you could reach the main body.

An uncountable number, to be sure.

Frankly, Kogasa herself explains her own mythological origins, so it's not really mysterious. Although it's a big point in Touhou that different mythologies get conflated with each other: that's why a Night Sparrow is named after a German siren, and why a Greek nymph is considered a Fairy of Hell. I wouldn't be surprised if Ippon Datara was also a Cyclops.
