I prefer the yolk to be gelatinous and translucent but not runny.

Sometimes it's good runny if I'm having breakfast burgers but then I'm probably using a fork and knife and that's just not proper burger etiquette.

I really like the spice tossed cheese broiled to the mustard/mayo bun, that is a pro as hell idea. Deep frying the burgs.. Hell, worth a try!

Burgin tonight.



The composition is a bit sloppy, mainly because I put too much onion, but you can never have too much onion. Cheddar, beef, dill, onion, romaine, red relish, mayo.

One half pound burg each for my sister and I. Burg on the right is 50% beef, 50% bacon, while the burg on the left is 50% beef, 50% sausage, with an egg.

The bacon burger was ok, but the sausage burger was sublime.

Side dish was the local version of poutine:

Any burg that is good that I'm eating at the time, really.

but if you wanna go whole hog, well,

Bacon, colby jack, avocado, dijon mustard, raw red onion, romaine lettuce, a nice fluffy bun and a patty done medium with that perfect tint of pink in the middle.

I actually just made it a few days ago, minus the good bun. We kinda used what we had left over for the buns, but otherwise yeah.

Good bun, good beef, fresh salad and tomato, not too much mayo or other condiments. A really good burger doesn't need cheese or bacon, it works with the simplest possible arrangement as long as the ingredients are good and treated with respect.

It had brown gravy and mozzarella instead of cheese curds; I wasn't sure of its authenticity hence the use of the word 'version'.

Although thinking about it now, I'm not sure I should have been concerned at all about the authenticity of poutine. :shobon:

From experience you really can't go wrong with egg. It fits equally well on a heart attack 5-meat burg or a veggie burg.

This will make a most excellent burg. The mayo/egg/cheese melting together works super well. The smashed burg crispy bits works great with the egg too.

No offense to the egg burg lovers out there, but I've just never really been a fan of it. It sounds great on paper having some warm yolk ooze over the patty, but the richness of it cuts through the flavor of the patty in a way that I never really cared for.

I like egg on burger but with it cooked just enough to have that jelly consistency rather than completely liquid yolk. Just a bit easier to eat since I'm uncoordinated and incapable of not spilling things all over myself.

Burged again yesterday; bun had an awesome crust and the meat was nice and tender. Not always the biggest fan of cooked onion over raw, though.

Raw onion is the way to go unless you're sautéing them alongside some mushrooms. Sautéed mushrooms and caramelized onions is an A+ flavor combo.
