The Unity episode, the season 2 premiere, and a few other spots of the top of my head (Rick reminiscing about baby Morty in Close Encounters of the RIck Kind because he thinks he might be about to die) demonstrates moments of emotional earnestness, its just not a priority like in Steven Universe, more of a side feature given that its primary purpose is to be funny rather than an epic sci-fi fantasy adventure like SU. If it pops up too much it'll turn into late era Scrubs, which I don't think anyone really wants.
