I make carbonara frequently but I usually add shrimp and use bacon and also fresh grated parm with my egg. Last time I accidentally grabbed linguini instead of spaghetti and didn't realize until it was already cooked, but I didn't throw it away and burn down my kitchen and kill myself, instead I threw caution to the wind and ate it and it was still delicious. Some people must be too serious about their carbonara rules.

So I had Svartsoppa for the first time last tuesday since I was in Sweden for November 11th. Now I've had blood soup before but this stuff was spiced a lot like gingerbread and was generally a bit sickly when I first tasted it plus it looks... Kinda bad. I tried to upload an image but imgur wasn't having it. Image in wikipedia isn't inaccurate: basically a dark red/purple/blackish thick mess.

So it turns out it's actually really good with something else I really don't like: Leberwurst: A sausage made of low grade ground up liver.

It adds that fatty, savoury saltiness that really sets it off.

So welp, two anti-food porns come together to make something really good.

It's a matter of terminology. What you make isn't 'spaghetti carbonara', it's a pasta dish based on carbonara. Imagine if you went to a restaurant and ordered 'spaghetti carbonara' and got a plate of linguine and shrimp. While still being a tasty dish it is categorically not the dish you thought you were going to get.

The only food rule I subscribe to is that I will eat any weird/gross thing at least once. It has yet to steer me terribly wrong.

The Rocky Mountain Oysters I had under this rule were chewy and disappointing, but the rattlesnake was pretty good.
