For what it's worth, I think the fusion idea is a good one. I can imagine seeing "Filipino-Caribbean food" on a banner and being like "oh, that sounds interesting. I'm gonna try that because I've never had anything like that." It's something to make you stand out. I still don't understand what's so dreamy about standing over a hot stove all day, dealing with customers, cleaning up afterwards and constantly worrying about money but that's just me, I guess.

I don't expect anyone to understand my desire to make less money for 10x the work. I've been working forty office hours and up to 50 food hours a week for the better part of a year, and the only parts that dragged were in the office. I'm not trying to get to a point where I can pay people to run this and I don't have to work. Im doing this because I believe in my fiancée, in Filipino food and in the city. I can't think of anything I'd rather do than bunch over a fryer and sell anyone and everyone on how much they're gonna love menudo

I asked my wife and she said Filipino food is becoming popular. Also mentioned it was generally way overpriced for what it is so maybe if you do big, cheap portions and rely on volume maybe you'll do alright. Or you can do the Toronto thing where you charge 15 dollars for half a meal. Toronto legit sucks for food and most entertainment because it's remarkably expensive for what you get.
