Also time in Dark Souls games is subjective and wobbly, so it's perfectly sensible to co-operate with a cool guy and then find his desiccated corpse an hour later.

No, you don't automatically become a zombie if you die while human, you first need to bear a curse called the dark sign to become a hollow.

In DS lore you can be undead but not a mindless hollow if you still have humanity left but you lose some every time you die. Tarkus probably lost all his somewhere in AL. The PC is considered to have some humanity so long as the player keeps at it and doesn't, like, uninstall the game out of frustration. IIRC only Sieglinde wasn't undead in ds1 so it's insane how far she gets.
