I'm pretty sure that the only canon Kobayashi Maru tests shown are Kirk's and Saavik's. However, the novels have all kinds of stupid depictions such as Scotty jerry-rigging engineering solutions to force the simulated Klingons into a stalemate. What about the Voyager crew? Janeway rapidly alternates between peace overtures and aggressive posturing, confusing the Klingons. Then she destroys the Kobayashi Maru herself as a distraction and makes her escape. Harry Kim falls in love with the Klingons and refuses to fire on them. Although I'm assuming they substitute Romulans for Klingons in the TNG era.

I like that Keiko is a bad cook in DS9 because even though it 's all replicated, she picks the grossest things from the menu. It's part of the only honest-to-god serial continuity in the series outside of big event episodes! There's the holographic Leah episode, the real Leah episode, and then in the Scotty vs. a Dyson Sphere episode Geordi and Mr. Scott laugh about how Geordi tortured a confused space newborn relying on the Enterprise for support by feeding it sour milk. e: The Brahms episodes are part of serial continuity, I mean.
