Ancient Western armies at least generally had skirmishers, lightly armed and armored troops whose job in set piece battles was to harass the enemy army and break up their formations with projectiles, then fall back through the formations of their own heavily armored infantry and maybe flank or pursue a routing enemy. I think the Greeks used slingers in that role frequently.

Essentially I know absolutely nothing about the HRE but at least something about the classical period so my closest analog for pike and shot is phalanxes and slingers. All of (what I assume to be) the HRE chat goes completely over my head because I know absolutely nothing about renaissance european warfare. My knowledge basically stops during the middle ages and picks up at the first world war.

At Stalingrad when Manstein was trying to relieve the pocket, Paulus is commonly said that had he been willing to disobey orders he could have broken out; Soviet Storm seems to imply that the Germans never got close enough to the pocket for an attempt to have worked. Did the Germans have any capability of breaking out?

Did the Germans have any capability of breaking out? I don't believe they did. The Russians had a bunch of tank and rifle divisions between Paulus and Manstein and the Germans didn't have enough of... anything in the area to change that. Just keeping Stalingrad supplied was costing thw Luftwaffe a lot in transports and escorts.
