Absorption was something the evil, super and kid versions did, but Mr. Buu is never shown absorbing anyone. Considering he is an offshoot its possible he lacks the ability to do so entirely.

Hmm. Beerus is purple, so is the Supreme Kai and the Elder Kai. Maybe there really were more Gods of Destruction before Buu. Beerus just hasn't mentioned them because the writers didn't need that to be a plot point yet or haven't thought of it.
