I have a nice bread maker and I love it. It loving killed me that sometimes my loaves would come out like that. After eliminating the usual suspects (yeast going bad is the most likely in this situation) it turns out that if you smooth out the ingredients as you put them in and not just let them pile up in a cone like a animal, then your loaf goes all fucky. Took many loaves to figure it out, but my bread game is under control.

There's more than a few recipes out there along the lines of "huge glob of dough in the fridge, cut off a piece, shape into ball, rise, bake." Result: delicious bread for less effort than I usually spend on dinner, cheap as hell. Breadmakers suck.
