I was really into emu eggs for a while and once I found them at a farmers market in California. They are only available for a few weeks/months so a couple years in a row I'd host a brunch and make omolettes for friends. It's a very rich tasting egg but other than that it's mostly normal. If you drill a hole in the bottom you can use a pump to get the egg out without ruining the beautiful shell.
