Anyone in the LA area have a go-to fishmonger? I live right down the street from McCall's in Los Feliz which has great fish and scallops, though a bit pricey. What I'm mostly looking for now is access to live crab and shrimp, plus a bigger and cheaper fish selection. I just spent a few weeks in Thailand and Philippines last month plus all of last week I was in Seattle so I've been spoiled on the seafood front. It's one area that I haven't pursued much at home so I'm hoping to change that once I find a good reliable source. Initial googling suggests Fish King in Glendale and Seafood Paradise in Rosemead so I will try to check one or both out this weekend, just curious if any LA goons have a spot to share as well.

I lived in San Diego for 25 years and I never ate a burrito with French fries in it. Yeah a lot of places had "California" burritos with potatoes but not French fries, in fact I can't think of too many places I went to that even offered such a thing, although a lot of places had carne asada French fries which were pretty good but I usually preferred the nachos.

I did my masters program in Brighton, and I was really disappointed by british fish and chips. I loving love fish and chips, but there was like only one or two places in town that actually did it well and didn't have their poo poo all soggy. on the other hand, I discovered the magic that is a battered sausage. jesus christ battered sausages are the loving bomb. extra pickled onions plz, a 2l bottle of strongbow, and I'm ready to FIGHT also mushy peas are strangely good.

Anyone have some good jamaican recipes or resources? I've been trying a few new things this week like pepper pot, rice and peas, miscellaneous braised and stewed vegetable things, they all taste good, but they don't physically resemble the pictures accompanying the recipes I've been using at all. My only real substitution has been using habaneros because I can't find fresh scotch bonnets on short notice. I also don't really have much to compare it to, there aren't any Jamaican restaurants etc. around here. The only thing I've seen are half assed versions of jerk <protein> jammed in where they're conspicuously out of place.

I made some "pastrami" by smoking leftover cornbeef tonight, it pretty much owned. was worried it would dry out, so I slathered it with bacon grease and a pastrami dry rub. Not that the extra lard did anything to keep it moist, but it didn't dry out at all, and got a nice bark after just an hour on the smoker at about 275. thin sliced that motherfucker, sauteed some sauerkraut with caraway and cumin, loaded an everything bagel up with some shropshire blue cheese, mayo + mustard - poo poo was delicious. I feel like for how available pre-corned beef is in american supermarkets, folks should cook the poo poo more.

Yeah, precorned silverside is the cheapest beef you can buy in Australia, usually $8/kg. (brisket is the second cheapest at $9/kg) I have tried a pastrami recipe for it once, but it's a bit ridiculous with 10hrs cooking time in the oven or smoker according to the recipe. So I've only done it once. Recipe is basically soak it in the fridge for 24hrs doing many water changes to get some of the salt out. Brown it. Rub it in mustard, salt, pepper, brown sugar and fish sauce mixture, bake in foil in an oven at 90C, or uncovered in a smoker at 100C for ridiculous amount for time.
