Cars are wildly unbalanced vertically since almost all of the weight at in the bottom, and whatever side the engine sits has the bulk of that. They were speeding, and caught the corner of the other vehicle forcing it upward, causing it to tumble. But yeah it's that easy, which is why roads are pretty flat.
