my favorite axes are those chopping ones that are also kinda sledge-hammer as well

axe + sledgehammer is a potent mixture

used to love tapping manholes with my huge sledgehammer to help loose them to open em up

It's not a significantly complicated nor delicate design. A piece of pig iron with a narrow edge that weighs around 100lbs would be more then sufficient for the purpose. You can buy the material's for fairly cheap. The only thing cheaper is a hang man's noose and trap door, I mean other than a bullet. But the purpose of the guillotine is the public spectacle and the message.

the guilotine was also more reliable than contemporary methods which involved either hanging (which could fail to break the condemned's neck) or beheading with an ax (which could take multiple swings)

They're called splitting axes as the axe blade itself is used for it and the sledge end can be used for wedges to split larger logs/trunks.

Wood hatchets have their own use but neither are usually wide enough for solid decapitation. You're better off with something made for combat or a legit guillotine for that. Maybe even just a sword.

It was considered a symbol the french revolution because of the scientific backing of it. Remember the French Revolution had a huge practical impact on the rest of the world, with the Metric System being one of the more recognizable consequences.

The way a guillotine (and an Axe and a broadsword) works isn't by being sharp. They are actually fairly dull. It's the pressure applied at the "dull" edge to the flesh that causes hydroshock and bone separation. Think of a butcher's cleaver, they aren't particularly sharp, but they are quite capable of separating bone.
