I kind of feel like sitting on as many grails as possible in the event I get better or at least different 4*/5* down the road. I could see myself putting in 7 for Herc eventually because his curve is Reverse S but a part of wants to hold out hope that I get say Jeanne Alter for the rest.

Grailed level stat growth is linear, previous stat curve is irrelevant. Herc would get the same amount of stats from grailing him up as any other 4*. And yeah, lvl 80-90 is overkill for most things until way down the line in Camelot, so you might as well save your grails for those servants you love.

Edit: ^  Well, grail growth is always linear, so you don't need to worry about the stat curve. Personally, I'm just putting one grail on Altera for now, but the rest I'm saving to get Serenity and Astolfo to 90 when they drop. Definitely want to get all three to max eventually though.

I think Summer Ishtar is speculated to be a Caster. If she is, she'll probably be an offense based Caster. Since I'm already saving all my grails on JP for Ishtar, I wonder if I should grail welfare Ishtar. My money is on her being a better Offensive Caster than Illya.

She's very likely to be the free Servant of the event (since a large part of the point of the free Servants, especially during major seasonals, is to let people get a version of a popular character who is otherwise difficult to obtain), so she'd be a good target for grailing if you want to follow the golden rule of grailing like Bholder outlined. And since there's no lore reason for Ishtar to have an NP that trashes her damage for three turns, and DW has hopefully learned their lesson about random-chance skills, yeah, she would hopefully make a pretty good offensive Caster. (If the racing theme means she ends up being the longed-for Quick Support Caster, though, I will laugh. Then keep laughing all the way to the bank beside my Jack.) Almost certainly not, for better or worse; they use Summer as an excuse to give characters who otherwise might never get alternate versions a chance to show off in a different class or look, and occasionally to make them easier to obtain (e.g., Summer Scath for people who couldn't roll her during rate-up, Summer Nobu here for people who somehow missed both Honnouji runs, etc). Everyone we saw is likely to be an obtainable Servant.
