That's a point, and while I like thousand island with fish you could perhaps not apply it in such a manner that your fish looks like it has a burst abscess. Like normally it's pretty viscous so you should be able to hide it under the rice.

When I make coconut rice I use salt to boost the flavour of the coconut then add some sugar to reduce the saltiness. It's loving delicious and the coconut flavour ends up incredibly strong. I've tried it without salt and sugar and you can barely taste the coconut at all. Seriously try it. It's amazing when you're not a food prude.
