The best thing would have been to immediately destroy the Millennium Falcon in the first 5 minutes, as what happened to Max's car in Fury Road.

Literally anything is 'plausible'. The question is what makes for good storytelling. We don't see any indication that Han is wearing 'cheap' clothes or that he is dumping his money into fashionable outfits to show off.

It looks a bit like "the" cybernetic arm. Not that it's important in anyway, just it looks like the unused concept for the Nazi with the robo arm in Raiders of the Lost Ark (IIRC this only existed as concept art but would have been the guy that beats up Indy pretty badly before getting propellered). The same arm design pops up now and then in EU stuff and even on one of the characters in that dogshit Masters of Teras Kasi video game.

As I recall, that song was written before the release of the movie, based on a partial plot summary provided to him for that purpose.

The deleted scenes for ESB brings up a question that I've always had, why not just use X-wings to take out AT-ATs?

In the deleted scene, Luke fires his X-wing's lasers at General Veer's AT-AT, destroying the head and killing General Veers. Begs the question of why use speeders and not the fighters to start with?

The X-Wings were being used as escorts for the transports; since those were more valuable. The speeders were primarily meant to delay the ground assault so the evacuation could proceed, not win the fight.

And the speeders needed adapted to run in cold weather. Maybe the X-Wings needed adapted as well, but they never had time to.

Actual reason, the snowspeeders looked cool

I can see why they cut the scene though. The AT-AT was taken out by two shots from an X-wing, making it really obvious that 1 X-wing could have annihilated all the AT-ATs in less time than it took the speeders to take out one.

They took it out because it ruins the first scene. Tension is way more important than "logic".

It's not Luke. It's some random snowspeeder pilot who kamikazes into the AT-AT. (It's in the novelisation, and I always wondered why the film didn't include it.)
