It's selective pressure. There were always white and black months. The proportions just changed based on the selective pressure. From mostly white and some.black to mostly black to some white. There's also questions about that even happening at all, even though it's a commonly sited 'fact'

The technical definition of evolution that evolutionary biologists use is simply "change in allele frequencies over time".
